We all LOVE comfort food; yummy, easy comfort food.
My mom used to make chicken and dumplings all the time when I was growing up so they are one of my absolute favorites.
I took what she did and simplified it. (Who wants to spend all day boiling a whole chicken and then cut it? NOT ME.)
(Please excuse the iphone picture. I do that too often. I’m sorry)
Here is what I do:
- 6-8 cups of water.
- Chicken granules or bouillon cubes to make broth
- 2 large FROZEN chicken breasts
- 2 cans of refrigerator biscuits (like these)
- Add 1, 2, and 3 and cover.
- Cook about 20 minutes or until chicken is cooked (doesn’t take long, I promise.)
- Remove chicken and shred or put in food processor for tiny bites
- put chicken back
- cut biscuits into preferred bite sizes (usually 4-6 pieces each biscuit, I like mine SMALL)
- cover again and cook about 15-20 minutes or until biscuits are cooked.
- stir about every 5 minutes so they don’t stick to the pot
